Shredded Omelet
7oz shredded vegetables
(these could include zucchini, bell peppers and onions)
2 eggs
¾oz of butter (oil can be used if preferred)
Salt and pepper to season
An 8 inch in diameter frying pan or skillet
Start by breaking two eggs into a basin, then with a fork lightly mix together the egg whites and yolks and season with
salt and pepper. Gently fry the shredded vegetables in the butter or oil and when soft pour in the beaten egg. Whilst cooking
loosen the edges using a palette knife and make a few cuts in the omelet this lets the liquid run through and cook. Continue
cooking until the underside of the omelet is golden. Now put the pan under a hot grill to brown the top of the omelet. Serve.
