Omelet 4 Two
2 or 3 eggs
1 teaspoonful of flour
½ a teacupful of milk
4 tablespoons (½ a stick or 2oz) of butter
A pinch of salt
A little cayenne pepper
A few herbs
Onion
you will also need
A small fry pan
First mix together the flour and the milk to a thin cream like consistency. Then in a separate bowl beat together the eggs and then mix these with the flour and milk. Now add a pinch of salt and a little cayenne pepper.
Next chop a few herbs and a small amount of onion, then melt the butter in a small fry pan and when the butter is very hot, pour in the batter, leave for a few minutes then sprinkle on the chopped herbs and the onion.
When almost set carefully fold in two and then gently shake the omelet onto a warm serving dish.
