Cheese & Onion Omelet
2 eggs
1oz cheddar cheese
Onion
About 1½ tablespoons of butter or a little olive oil
Salt and pepper to season

An omelet pan, skillet or fry pan with a 6 inch diameter base.
First grate the cheese and finely chop a small amount of onion. Then break two eggs into a bowl, whisk together and season with salt and pepper. Now add the cheese and onion and mix.
Next put the empty skillet on the heat to warm - so that when the butter is added it begins to melt. Then put the butter into the pan and tilt the pan so that the butter melts and coats the sides and base.
When the butter becomes foamy pour in the egg mixture, stir with a fork and shake the pan frequently until the omelet begins to set.
Then when the omelet is just about set, using a rubber spatula or palette knife, loosen it from the edge of the pan before carefully folding the omelet in two and turning it onto a warmed plate. Serve at once.
