Baked Tomatoes Recipe
6 ripe tomatoes
2 cups breadcrumbs
2 tablespoons butter (melted)
¾ teaspoon herbs
Pinch of pepper
1½ teaspoons salt
olive oil
Begin by washing the tomatoes and then drying them on kitchen paper. Next cut a slice from the top of the tomatoes and scoop out the seeds leaving as much of the flesh as possible. In a basin add the salt, pepper and herbs to the breadcrumbs and then add the melted butter and mix together.
Fill the tomatoes with the mixture and replace the tops. Place in a baking tin. Drizzle a little olive oil over each tomato
and bake at 350°F(180°C) for approximately twenty minutes, or testing with a skewer, until the tomatoes are soft but
still whole and the crumbs are golden.
