Plain Cookies
The Ingredients
1 lb all-purpose flour
Half a pint of milk
1 oz superfine sugar (caster sugar}
3 oz softened butter
1 teaspoons of baking soda (baking powder)
A pinch of salt
1 egg
Begin by sifting together the flour and baking soda. Next, using your fingertips rub in the butter, until the mixture resembles
breadcrumbs, add the salt and sugar and mix together. In another bowl beat together the egg and milk and then add this to
the mixture, stir everything together to form a dough. Divide the dough into about 7 pieces and roll each piece into a ball.
Then on a floured board, with a floured rolling pin, flatten each one until it’s about half an inch thick With a fork,
prick each biscuit and place on to a lightly buttered baking sheet. Bake at 425°F (220°C) for approximately twenty
minutes.
