Fruit Cookies
6oz all-purpose flour (1½ cups)
3oz superfine sugar (caster sugar)
3oz butter (softened)
1 egg yolk (beaten)
1½ of currants and candied peel
Preheat the oven to 300°F(150°C)
Grease a baking sheet.
Begin my mixing together the sugar and butter until pale and creamy.
In a second bowl mix together the flour, currants and candied peel and the salt. Add a little of the beaten egg yolk to the creamed butter and sugar and mix, then add some of the mixed dry ingredients and stir.
Continue alternately adding the beaten egg yolk and the dry ingredients, stirring after each addition. The mixture should now be a firm dough, but if you think the mixture is not the right consistency then add a tiny amount of milk.
Roll out the dough on a floured surface to approximately a quarter of an inch thick. Cut out the cookies with a cookie cutter and place on the prepared baking sheet.
Bake until a light golden brown. Remove the cookies from the baking sheet to cool.
