Chocolate Brownies
2oz all-purpose flour ½ cup
2oz all-purpose flour ½ cup
7oz granulated sugar
2 eggs
4oz butter ½ cup or 1 stick
3oz unsweetened chocolate (broken into small pieces)
4oz chopped pecan or walnuts
1 teaspoon vanilla extract (vanilla essence)
½ teaspoon baking soda (baking powder)
¼ teaspoon salt
Preheat the oven to 350°F (180°C)
Grease and flour an 8 inch by 8 inch or 13 inch by 9 inch baking pan, alternatively cooking spray or parchment paper may be
used.
Beat together the eggs, sugar and vanilla extract.
In a second bowl sift together the flour and baking soda.
Put the broken chocolate, the butter and the salt in a heatproof bowl positioned over a saucepan of gently simmering water,
stir continuously until melted and smooth.
Remove from the heat and add to the chocolate mixture the beaten egg, sugar and vanilla extract and then add the sifted flour and baking soda, stir together until all the ingredients are well mixed. Add the nuts and stir again. Pour the mixture into a prepared baking pan and spread evenly.
Bake for twenty-five to thirty minutes, until the brownie starts to shrink from the sides of the pan and the middle is soft and springy. Leave the brownie to cool in the tin, then cut into squares.
