Sugar and Spice Cookies
2 cups (8oz) of flour
2 teaspoons of baking powder
½ teaspoon of salt
1 teaspoon of mixed spice
1 egg
½ a cup (8 tablespoons) of butter or soft margarine
1 cupful of sugar
Just under half a cup of milk or water
you will also need
A baking sheet or 2
Parchment paper (optional)
The ingredients for these sugar and spice cookies should be at room temperature and the butter soft, so you may need to leave the butter out of the refrigerator for several hours or perhaps overnight. If on the other hand you’re using soft margarine this and the egg should ideally be taken from the refrigerator about an hour or so before baking.
Then, when you’re ready to begin, grease or line a baking sheet with parchment paper and preheat the oven to 375°F.
Next, sift the flour into a bowl followed by the baking powder, salt and spice. In a second bowl cream (beat) together the butter and sugar until pale and light. In a third smaller bowl beat the egg.
Then, beating well after each addition, gradually add the egg to the creamed butter and sugar mixture. Now alternately add the sifted ingredients and just enough milk to make a dough that is stiff enough to roll out. Then put the dough in the refrigerator for about an hour, to chill and rest.
After this, leaving the remaining dough in the refrigerator, break off a portion of the dough and sprinkle a suitable surface or board and a rolling pin with flour. Now roll out the dough to about a ¼ inch thickness and sprinkle with sugar.
Then dipping a cookie cutter into flour from time to time as you go cut the dough into rounds and place the rounds on the prepared baking sheet. Repeat with the remaining dough. Then bake for about 10 minutes or until golden.
