Oaties
4oz oat flakes
3oz self-rising flour
4oz confectioners’ sugar (powdered sugar)
1 stick (½ cup or 4oz) butter
you will also need
A baking sheet or 2
Parchment paper (optional)
The butter for this recipe should be soft, so you may need to leave it out of the refrigerator for several hours or perhaps even overnight.
Then when you’re ready to begin baking line with parchment paper or grease a baking sheet and preheat the oven to 350°F.
Next, sift the confectioners’ sugar into a bowl, then add the butter and cream (beat) together until blended - a handheld electric mixer is ideal for this – now add 1½ oz of the oat flakes and the flour and mix until the mixture combines to form a soft dough.
Then, divide the dough into 16 pieces and roll each piece into a ball. Dip each ball into a small bowl of water, then roll it in the remaining oat flakes.
Now place the cookies, about 3 inches apart, on the prepared baking sheet, flatten a little and bake for 15-20 minutes. When cooked remove from the oven and leave the oaties to cool on the baking sheet before storing.
