AM Cookies
1 lb all-purpose flour
½ a pint of milk
1 oz superfine sugar
3 oz butter
1 teaspoon of baking powder
A pinch of salt
1 egg
you will also need
A baking sheet
Parchment paper (optional)
The butter for making AM cookies should be soft, so you may have to leave it out of the refrigerator for several hours before you begin baking. The egg too is best if at room temperature and this should ideally be removed from the refrigerator about an hour or so before baking.
Then, when you’re ready to begin, grease or line a baking sheet with parchment paper and preheat the oven to 425°F.
Next put the flour and baking powder into a large mixing bowl and mix together. Now cut up the butter and then add this to the flour. Next, using your thumbs and fingertips, rub the butter into the flour until it resembles breadcrumbs, then add the sugar and salt and stir to mix.
In a separate bowl beat together the egg and the milk. Now mix just enough of this with the dry ingredients to form a dough. Divide the dough into seven pieces and roll each piece into a ball.
Then lightly sprinkle a board or suitable surface and a rolling pin with flour, flatten out each piece to about a half an inch in thickness and prick with a fork. Now place the cookies onto the prepared baking sheet and bake for about 20 minutes or until pale and golden.
