Cookie Cutter Cookies
2 cups (8oz) all-purpose flour
1 stick (½ cup or4oz) butter
4oz superfine sugar
1 egg
½ teaspoon of baking powder
To ice
4 heaped tablespoons of confectioners’ sugar (powdered sugar)
1 tablespoon or so of tepid water
A little food coloring
you will also need
1 baking sheet maybe 2
Parchment paper (optional)
The ingredients for this recipe should be at room temperature and the butter soft. So you may need to leave the butter out of the refrigerator for several hours or even overnight, and remove the egg from the refrigerator about an hour or so before baking.
Then when you’re ready to begin grease or line with parchment paper, a baking sheet and preheat the oven to 350°F.
Next put the flour into a bowl and add the butter, then with your thumbs and fingertips rub the butter into the flour. Now, stir in the sugar and baking powder. In a separate bowl beat the egg. Now add the egg to the dry ingredients to form a dough. If the dough is too sticky then add a little flour, if it’s too dry then add a little milk.
Sprinkle a suitable surface or board and a rolling pin with flour and roll out the dough to about a ¼ inch thickness. Then dipping the cookie cutter in flour from time to time, cut into shapes of your choice. Bake for about fifteen minutes or until pale and golden but keep an eye on them, they may be ready sooner.
When baked remove the cookies from the oven. Then there are two options, firstly the cookies can be sprinkled with superfine sugar before carefully transferring them to a cooling rack and allowing them to cool completely or alternatively after removing the cookies from the oven transfer them to a cooling rack and leave to cool completely before icing.
To ice the cookies – sift the confectioners’ sugar into a bowl, then adding just enough tepid water to make an icing that will thickly coat the back of a spoon, mix until smooth. If the icing is too runny just add a little more confectioners’ sugar, too thick? Just add a little more tepid water.
Then with a skewer – this is a good way of controlling the amount of color that you add – depending on how pale or intense you would like the color to be add a drop or two of food coloring and mix until even. Decorate the cookies as liked.
