Lemon and Honey Chicken
6 chicken pieces
¼ cup of lemon juice
½ cup of honey
1 teaspoon of salt
Begin by preheating the oven to 350°F; then rinse the chicken pieces under cold running water and pat them dry on paper towel. Now arrange the chicken, skin side down, in a shallow baking pan.
Next in a small bowl mix together the lemon juice, the honey and the salt; then pour half of this sauce over the chicken, and cover and bake for 30 minutes.
After the 30 minutes turn the chicken skin side up and pour over the remaining lemon and honey sauce; then, removing the cover for the last ten minutes of cooking, re-cover and continue cooking for about another 30 minutes or until the chicken is cooked through. Serve.
