Lemon Chicken
2 whole boneless and skinless chicken breasts
3 tablespoons breadcrumbs
2 cup lemon juice
2 cup white wine
¼ cup fresh parsley
2 cloves fresh minced garlic
2 tablespoons olive oil
Begin by rinsing the chicken under cold running water and patting dry with paper towel. Then place it between 2 sheets of plastic wrap and pound to a ¼ inch thick. Now, lightly coat the chicken with the breadcrumbs.
After this, in a bowl, combine the wine, the garlic and the lemon juice, and set to one side.
Now heat the olive oil in a large skillet, then add the chicken and brown for 5 minutes on each side.
Next, stir the wine mixture and then slowly pour this over the chicken in the skillet. Now sprinkle with parsley and leave to simmer for about five minutes or until the chicken is cooked through.
Serve with the lemony pan juices.
